Vinification
The vinification takes place in stainless steel tanks for 10-12 days "pumping over" 3-4 times for day in order to extract the amount of colour and tannins right enough to undergo a year stocked in barrels. The fermentation temperature is controlled at 28-30°C in order to avoid the lost of characteristic perfumes. After racking, the wine is held at about 20°C to allow initiation of a malolactic fermentation.
Aging
the wine is stored in barriques for 14-15 months (30% new barriques – 70% used) in order to fix the colour and extract from the wood smooth tannins. During this period the wine is decanted every 4 months. Finally it is bottled and stored for other 4 months before release.

altitude: about 300m

soil: tufaceous and calcareous
