Vinifiction
The vinification takes place in stainless steel tanks for 10-12 days and "pumping over" 2-3 times for day to extract the right amount of colour and tannins. The fermentation temperature is controlled at 28-29°C in order to avoid the lost of characteristic perfumes.The wine is stocked in stainless steel tanks where the malolactic fermentation takes place.
Aging
the wine is stored in French barrels of 500 litres for 12-13 months. During this period the wine will be racked in order to avoid sedimentary odours. After this period of refinement the wine is left in storage in steel vessels for 3-4 months. It is now ready for bottling.
Vineyards
Blend of vineyards of Barolo. The proportion between 2 vineyards change every year.
