Vinification
The vinification takes place in stainless steel tanks for 7-8 days depending on the season and the grape conditions. During this phase a daily "pumping over" is performed to extract the right amount of colour. The fermentation temperature is controlled at 28-29°C in order to avoid the extraction of undesired tannins.
Aging
The wine is stocked in stainless steel tanks until March. During this period it is decanted 2-3 times to avoid reductions. After the last phase it is bottled and stored for other two months.
